Rustic Vegan Apple Cake
This lightly sweet apple cake is tender, moist, and full of fall flavor. Made with simple plant-based ingredients and topped with sliced apples, it's a delicious bake perfect for weekend brunches or afternoon tea.
Ingredients
1½ cups (180 grams) all-purpose flour
½ cup (100 grams) coconut sugar or cane sugar
1½ tsp. (6 grams) baking powder
½ tsp. (2 grams) baking soda
½ tsp. (1 gram) cinnamon
¼ tsp. (1 gram) salt
1 cup (240 ml.) unsweetened non-dairy milk
¼ cup (60 ml.) olive oil or melted coconut oil
1 tbsp. (15 ml.) apple cider vinegar
1 tsp. (5 ml.) vanilla extract
2 small apples, thinly sliced
Optional: powdered sugar for dusting
Directions
Preheat oven to 350°F (175°C). Line or grease a round 8-inch (20 cm) cake pan.
In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
In a separate bowl, mix non-dairy milk, oil, vinegar, and vanilla. Add wet to dry and stir until just combined.
Pour batter into prepared pan and gently spread evenly. Arrange apple slices over the top in a circular pattern, overlapping slightly.
Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
Let cool for 10 minutes before removing from pan. Dust with powdered sugar if desired.
