Birthday Mug Cake
Sometimes you just want cake — no oven required. This birthday mug cake is the perfect one-bowl answer, made in minutes any time you want a fun, colorful snack.
Ingredients
4 tbsp. (30 g.) all-purpose flour
2 tbsp. (25 g.) coconut sugar
¼ tsp. (1 g.) baking powder
Pinch of sea salt
3 tbsp. (45 ml.) non-dairy milk
1 tbsp. (15 ml.) avocado oil
¼ tsp. (1 ml.) vanilla extract
½ tbsp. (5 g.) rainbow sprinkles
Directions
In a microwave-safe mug (at least 8 oz./240 ml.), stir together the flour, sugar, baking powder, and salt.
Add the non-dairy milk, oil, and vanilla extract. Stir until just combined, but do not overmix.
Fold in the sprinkles.
Microwave on high for 45 to 60 seconds, or until the cake is set but still soft in the center.
Let cool for 1 to 2 minutes before enjoying. Optionally, top with coconut whipped cream or extra sprinkles.
