Watermelon-Lime Mint Cooler | Plantsy Vegan Recipes
This August cooler recipe keeps things simple with sweet watermelon, fresh lime, and mint blended into a cold, bright smoothie. It is a good way to use peak-season watermelon and works well for breakfast, an afternoon refresher, or a simple nonalcoholic summer drink.

Ingredients
For the Smoothie
6 cups (900 g) seedless watermelon cubes, chilled
1 cup (140 g) frozen watermelon cubes or ice
¼ cup (60 ml) fresh lime juice
2 tbsp. (8 g) fresh mint leaves, plus more to taste
1 to 2 tbsp. (15 to 30 ml) maple syrup or agave, optional
½ cup (120 ml) cold coconut water or water, plus more as needed
Pinch of sea salt
For Serving
Lime slices or wedges
Fresh mint sprigs
Extra watermelon wedges, optional
Ice, optional
Directions
Add the chilled watermelon, frozen watermelon cubes or ice, lime juice, mint leaves, maple syrup or agave, if using, coconut water or water, and sea salt to a blender.
Blend until smooth and frothy. Add another splash of coconut water or water if needed to help the mixture blend or to thin it to your preferred consistency.
Taste and add a little more lime juice, mint, or sweetener if needed.
Pour into glasses or jars.
Serve with lime slices or wedges, fresh mint sprigs, extra watermelon wedges, and ice, if desired.
Make It Yours
For August, keep the watermelon-lime base and change the herb or fruit depending on what you have available.
Basil can replace some or all of the mint for a slightly different finish.
Add strawberries, raspberries, or a little pineapple for a fuller fruit flavor, or blend in a few cucumber slices for a cooler, lighter drink.
If you want a creamier smoothie, add a few tablespoons of dairy-free yogurt.
For a frozen version, use all frozen watermelon and skip the extra water until after blending.
