6 cups (900 g) peeled and thinly sliced apples
⅓ cup (55 g) coconut sugar
2 tbsp. (16 g) cornstarch
1 tbsp. (15 ml) fresh lemon juice
1 tsp. vanilla extract
1 tsp. ground cinnamon
⅛ tsp. ground nutmeg
Pinch of sea salt
⅓ cup (50 g) raisins
For the Oat Crumble Topping
1 cup (120 g) all-purpose flour
1 cup (90 g) old-fashioned rolled oats
½ cup (80 g) coconut sugar
½ tsp. ground cinnamon
¼ tsp. sea salt
½ cup (112 g) cold vegan butter, cut into small pieces
For Serving
Dairy-free vanilla ice cream or plain dairy-free yogurt
Extra cinnamon, optional
Directions
Preheat the oven to 375°F (190°C). Lightly grease an 8-inch square baking dish or a similar 2-qt. baking dish.
Add the apples, cane sugar or light brown sugar, cornstarch, lemon juice, vanilla, cinnamon, nutmeg, sea salt, and raisins to a large bowl. Toss until the apples are evenly coated.
Transfer the apple mixture to the prepared baking dish and spread it into an even layer.
Add the flour, oats, brown sugar, cinnamon, and sea salt to a medium bowl. Stir to combine.
Add the cold vegan butter and work it into the dry ingredients with your fingertips or a pastry cutter until the mixture forms coarse crumbs.
Sprinkle the crumble topping evenly over the apples.
Bake for 35 to 40 minutes, until the topping is golden and the apple filling is bubbling around the edges.
Let the crumble rest for 10 to 15 minutes before serving.
Serve warm with dairy-free vanilla ice cream or plain dairy-free yogurt and extra cinnamon, if desired.
