Strawberry-Almond Chia Pudding Parfait


This March chia pudding parfait is a simple make-ahead breakfast or snack with creamy chia, sliced almonds, and a quick strawberry layer. It is easy to prep the night before, then finish with fresh strawberries and mint when you are ready to serve.


Yield: 4 servings | Time: 15 minutes, plus chilling time


Ingredients


For the Chia Pudding

  • ½ cup (80 g) chia seeds

  • 2 cups (480 ml) unsweetened almond milk or other plain plant milk

  • ¼ cup (25 g) old-fashioned rolled oats

  • ¼ cup (20 g) sliced almonds

  • 2 tbsp. (30 ml) maple syrup

  • ½ tsp. vanilla extract

  • Pinch of sea salt


For the Strawberry Layer

  • 2 cups (300 g) strawberries, hulled and chopped

  • 1 tbsp. (15 ml) maple syrup

  • 1 tsp. fresh lemon juice


For Serving

  • 1 cup (150 g) fresh strawberries, hulled and sliced

  • 2 tbsp. (10 g) sliced almonds

  • Fresh mint leaves


Directions


  1. Whisk together the chia seeds, plant milk, oats, sliced almonds, maple syrup, vanilla, and sea salt in a medium bowl.

  2. Let the mixture stand for 10 minutes, then whisk again to break up any clumps. Cover and refrigerate for at least 4 hours, or overnight, until thickened.

  3. Add the chopped strawberries, maple syrup, and lemon juice to a small bowl. Mash lightly with a fork until the berries release some juice but still have texture.

  4. Spoon the strawberry layer into 4 glasses or jars.

  5. Stir the chia pudding, then spoon it over the strawberries.

  6. Serve with sliced strawberries, sliced almonds, and fresh mint leaves.


Make It Yours


For March, keep the chia pudding base and adjust the fruit as spring produce starts to show up.


  • Use sliced citrus, kiwi, blueberries, raspberries, or a mix of berries in place of some of the strawberries.

  • For a brighter layer, add a little orange zest or lemon zest to the mashed berries.

  • Swap the almonds for chopped pecans, walnuts, pumpkin seeds, or toasted coconut.

  • For a smoother parfait, blend the strawberry layer before spooning it into the glasses.
