Pink Dragon Fruit Smoothie Bowl with Banana and Coconut Recipe
This Pink Dragon Fruit Smoothie Bowl blends frozen dragon fruit, banana and berries into a thick, bright pink base with a smooth, spoonable texture. Banana slices, coconut flakes, finely chopped pumpkin seeds and cacao nibs add simple rows of topping for a fresh breakfast bowl that looks colorful, clean and easy to assemble.

Ingredients
For the Smoothie Bowl
1 frozen dragon fruit packet, about 3.5 oz. (100 g.), slightly thawed just enough to break into pieces
1 frozen banana, sliced
½ cup (75 g.) frozen strawberries or raspberries
¼ cup (60 ml.) unsweetened plain coconut milk beverage or plant milk
¼ cup (60 g.) plain unsweetened coconut yogurt or plant-based yogurt
1 tsp. (5 ml.) maple syrup, optional
1 tsp. (5 ml.) fresh lime juice
Pinch of fine sea salt
For Serving
½ banana, sliced
2 tbsp. (10 g.) unsweetened coconut flakes
1 tbsp. (10 g.) finely chopped pumpkin seeds or sesame seeds
1 tbsp. (10 g.) cacao nibs
1 tsp. (4 g.) chia seeds, optional
Directions
Add the dragon fruit, frozen banana, frozen strawberries or raspberries, coconut milk beverage, coconut yogurt, maple syrup, lime juice and salt to a high-speed blender or food processor.
Blend until thick, smooth and bright pink, stopping to scrape down the sides as needed. Add more coconut milk beverage 1 tbsp. (15 ml.) at a time only if the mixture will not move.
Spoon the smoothie mixture into a bowl and smooth the surface with the back of a spoon. The base should be thick enough to hold the toppings in clear rows.
Arrange the banana slices in a neat line across one side of the bowl.
Add the finely chopped pumpkin seeds or sesame seeds in a narrow strip beside the banana.
Add the coconut flakes next, then finish with a strip of cacao nibs. Sprinkle with chia seeds, if using.
Serve right away while the smoothie bowl is cold and thick.
Make It Yours
For a creamier bowl, use canned light coconut milk in place of the coconut milk beverage.
For more berry flavor, replace the strawberries with frozen raspberries.
For a slightly brighter finish, add a little extra lime juice before blending.
For more crunch, add chopped almonds, walnuts or toasted pumpkin seeds.
For a more dessert-like bowl, add 1 tsp. (5 ml.) almond butter to the smoothie base or finish with a few vegan dark chocolate shavings.
Kitchen Notes
The key to this bowl is using frozen fruit and very little liquid. Too much plant milk will make the smoothie thin and the toppings will sink.
Dragon fruit gives the bowl its bright pink color. Frozen pitaya packets work best because they blend smoothly and keep the color strong.
Slice the banana just before serving so it stays pale and fresh against the pink base.
