Fresh August peaches are the kind of fruit that can turn a simple breakfast into something worth slowing down for. This peach granola parfait recipe keeps the ingredients easy: creamy coconut yogurt, crisp oat granola, chia seeds, coconut, and juicy peaches layered in a glass so every spoonful has a little crunch, creaminess, and fruit. It works beautifully for breakfast, an afternoon snack, or a light make-ahead treat.

Ingredients


  • 1 ½ cups plain or vanilla coconut yogurt

  • 1 cup granola (see below for a homemade version)

  • 2 ripe peaches, diced

  • 1 tbsp. chia seeds

  • 2 tbsp. unsweetened shredded coconut

  • 1 tsp. maple syrup, optional

  • ¼ tsp. ground cinnamon, optional

  • 1 tsp. fresh lemon juice, optional, if the peaches need a little brightness


For Serving

  • Extra diced peach

  • Extra granola

  • A light drizzle of maple syrup, optional


Directions


  1. Add the diced peaches to a small bowl. If desired, stir in the maple syrup, cinnamon, and lemon juice. Let the peaches sit for 5 minutes while you prepare the parfait glasses.

  2. Spoon a layer of coconut yogurt into the bottom of each glass.

  3. Add a layer of granola, then sprinkle with chia seeds and shredded coconut.

  4. Add a layer of peaches, then repeat with more yogurt, granola, chia seeds, coconut, and peaches.

  5. Finish with the extra diced peach, extra granola, and a light drizzle of maple syrup, if using. Serve right away for the best crunch.


Make It Yours


For a softer, spoonable parfait, assemble it 20 to 30 minutes before serving so the granola has time to settle into the yogurt. For more crunch, keep the granola separate and add it just before eating. You can also swap in nectarines, plums, or a mix of late-summer stone fruit.


Pairs Well With


Serve with hot tea, cold brew, or a green smoothie for an easy August breakfast. It also works nicely alongside toast with almond butter if you want something a little more filling.

This lightly crisp homemade granola is made to layer beautifully with coconut yogurt and fresh peaches. It has the same simple oat-and-seed look as the parfait in the photo, with enough crunch to hold up against the fruit without turning heavy or overly sweet.

Ingredients


  • 3 cups (270 g) old-fashioned rolled oats

  • ½ cup (45 g) unsweetened shredded coconut

  • ⅓ cup (45 g) sliced almonds or chopped walnuts

  • ¼ cup (35 g) sunflower seeds

  • 2 tbsp. chia seeds

  • 1 tsp. ground cinnamon

  • ¼ tsp. sea salt

  • ⅓ cup (80 ml) maple syrup

  • ¼ cup (60 ml) melted coconut oil or avocado oil

  • 1 tsp. vanilla extract


Directions


  1. Preheat the oven to 325°F (165°C). Line a large, rimmed baking sheet with parchment paper.

  2. In a large bowl, combine the oats, shredded coconut, almonds, sunflower seeds, chia seeds, cinnamon, and sea salt.

  3. In a small bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract.

  4. Pour the maple mixture over the oat mixture and stir until everything is evenly coated.

  5. Spread the granola in an even layer on the prepared baking sheet, pressing it down lightly with the back of a spatula.

  6. Bake for 22 to 28 minutes, stirring once halfway through, until the oats are lightly golden and the kitchen smells toasted.

  7. Let the granola cool completely on the baking sheet. It will crisp as it cools. Break it into small clusters.

  8. Store in an airtight container at room temperature for up to 2 weeks. Use in peach parfaits with coconut yogurt and diced fresh peaches.


Make It Yours


For larger clusters, stir the granola only once and press it back into the pan before finishing the bake. For a softer parfait-style crumble, break the cooled granola into smaller pieces before storing. You can also add a pinch of cardamom or nutmeg if you want a warmer flavor with late-summer peaches.

Coconut yogurt, almond yogurt, diced peaches, nectarines, berries, banana slices, or a spoonful of fruit compote.
