Maple-Glazed Roasted Carrots with Fresh Dill and Olives | Easy Vegan Recipe

Ingredients


  • 1 lb. (450 g.) carrots, peeled and cut into sticks

  • 1 tbsp. (15 ml.) extra virgin olive oil

  • 1 tbsp. (15 ml.) maple syrup

  • 1/4 tsp. (1.5 g.) sea salt

  • 1/8 tsp. (0.5 g.) ground black pepper

  • 1 tbsp. (4 g.) chopped fresh parsley or dill, for garnish

  • black olives (optional)


Directions


1.     Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

2.     In a large bowl, toss the carrot sticks with olive oil, maple syrup, sea salt, and black pepper until evenly coated.

3.     Spread the carrots in a single layer on the prepared baking sheet.

4.     Roast for 20 to 25 minutes, flipping halfway through, until the carrots are tender and slightly caramelized.

5.     Transfer to a serving dish and sprinkle with chopped parsley or dill and add olives before serving.


Make It Yours


• Add a pinch of smoked paprika or cayenne for a spicy kick.

• Toss in a few whole garlic cloves to roast alongside the carrots for added depth.

• Finish with a squeeze of fresh lemon juice to brighten the flavor.

Air Fryer Variation


• Preheat the air fryer to 380°F (193°C).

• Toss the carrot sticks with olive oil, maple syrup, sea salt, and black pepper as directed.

• Place the carrots in the air fryer basket in a single layer (work in batches if needed).

• Air fry for 12 to 15 minutes, shaking halfway through, until tender and lightly browned.

• Garnish with chopped parsley and serve warm.
