Mango Coconut Overnight Oats | Easy Vegan Breakfast Idea

Mango Coconut Overnight Oats make a bright, creamy breakfast with rolled oats, chia seeds, coconut milk and juicy mango layered into a spoonable jar. Toasted coconut adds a light crunch on top, while the mango keeps each bite fresh, sunny and naturally sweet.

Mango Coconut Overnight Oats Recipe

Ingredients


For the Overnight Oats

  • 1 cup (90 g.) rolled oats

  • 1 tbsp. (12 g.) chia seeds

  • 1 cup (240 ml.) unsweetened plain coconut milk beverage or oat milk

  • ½ cup (120 g.) plain unsweetened coconut yogurt or plant-based yogurt

  • 1 tbsp. (15 ml.) maple syrup, plus more to taste

  • ½ tsp. vanilla extract

  • ¼ tsp. fine sea salt

  • 1 cup (165 g.) diced ripe mango, divided


For Serving

  • ½ cup (80 g.) diced ripe mango

  • ¼ cup (20 g.) unsweetened coconut flakes or wide coconut chips

  • 1 tbsp. (12 g.) chia seeds, optional

  • 1 tsp. (5 ml.) maple syrup, optional


Directions


  1. In a medium bowl, stir together the rolled oats, chia seeds, coconut milk beverage, coconut yogurt, maple syrup, vanilla and salt.

  2. Fold in ½ cup (80 g.) diced mango, keeping the remaining mango for layering and topping.

  3. Divide half of the oat mixture between 2 small jars or glasses.

  4. Add a layer of diced mango, then spoon the remaining oat mixture on top.

  5. Cover and refrigerate for at least 4 hours or overnight, until the oats are creamy and the chia seeds have thickened the mixture.

  6. Before serving, stir gently if needed. If the oats are thicker than you like, add 1 to 2 tbsp. (15 to 30 ml.) coconut milk beverage to loosen them.

  7. Top each jar with the remaining diced mango, coconut flakes, chia seeds and a small drizzle of maple syrup, if desired.


Make It Yours


→ For a richer coconut flavor, use canned light coconut milk in place of half of the coconut milk beverage.

→ For more tropical flavor, add ¼ cup (40 g.) diced pineapple with the mango.

→ For a brighter finish, add 1 tsp. finely grated lime zest or a squeeze of fresh lime juice before serving.

→ For extra protein, stir 2 tbsp. (30 g.) plain unsweetened plant-based yogurt or 1 tbsp. (8 g.) vanilla plant protein into each serving, adding a splash more coconut milk beverage as needed.


Kitchen Notes


→ Use ripe mango that is sweet but still firm enough to hold its shape. Very soft mango will blend into the oats and make the layers less distinct.

→ Wide coconut flakes or coconut chips create the best look on top. Smaller shredded coconut can be used, but it will give a finer, softer finish.

→ The oats should be creamy and spoonable, not runny. If they seem loose after chilling, stir in another 1 tsp. (4 g.) chia seeds and let them sit for 10 minutes before serving.


Pairs Well With


Serve these overnight oats with hot coffee, green tea, fresh berries, banana slices, almond butter toast or a small smoothie for a more filling breakfast.
