Berry Açaí Crunch Smoothie Bowl Recipe
This easy vegan Berry Açaí Crunch Smoothie Bowl blends frozen berries, banana and açaí into a thick, spoonable base with a bright berry flavor and creamy texture. Finished with crunchy granola, pumpkin seeds, nuts and frosty berries, it makes a refreshing plant-based breakfast, light lunch or afternoon reset.

Ingredients
For the Smoothie Bowl
1 frozen banana, sliced
1 unsweetened frozen açaí packet, about 3.5 oz. (100 g), slightly thawed just enough to break into pieces
¾ cup frozen mixed berries (105 g), such as blueberries, blackberries and raspberries
¼ cup unsweetened plain plant milk (60 ml), plus 1 to 2 tbsp. more only if needed
1 tbsp. almond butter or cashew butter
1 tsp. maple syrup, optional
½ tsp. fresh lemon juice
Pinch of fine sea salt
For Serving
⅓ cup crunchy vegan granola (35 g)
1 tbsp. pumpkin seeds
1 tbsp. sliced or whole almonds
1 tbsp. chopped walnuts
2 tbsp. frozen red currants or raspberries
2 tbsp. frozen blueberries or blackberries
Directions
Add the frozen banana, açaí, frozen mixed berries, plant milk, almond butter, maple syrup, lemon juice and salt to a high-speed blender or food processor.
Blend until very thick and smooth, stopping to scrape down the sides as needed. Use the tamper if your blender has one. Add extra plant milk 1 tbsp. at a time only if the mixture will not move. The finished texture should be thick enough to hold soft folds and support the toppings without sinking.
Spoon the smoothie mixture into a shallow bowl. Use the back of a spoon to smooth it into a thick, swirled surface, leaving a little movement and texture rather than spreading it completely flat.
Add the granola over one side of the bowl in a wide band, covering about one-third to one-half of the surface.
Sprinkle the pumpkin seeds, almonds and walnuts over the granola so the topping looks abundant and layered.
Add the frozen red currants or raspberries and frozen blueberries or blackberries in a loose line between the granola and smoothie base, letting a few berries spill slightly onto each side.
Serve right away while the smoothie bowl is cold, thick and spoonable.
Make It Yours
For a creamier bowl, use 2 tbsp. coconut yogurt in place of part of the plant milk. For extra brightness, add a little orange zest or a squeeze of lime.
For more protein, blend in 2 tbsp. plain unsweetened plant-based yogurt or a small scoop of unflavored plant protein, adding only enough plant milk to keep the texture moving.
For a less sweet bowl, skip the maple syrup and use unsweetened granola. For a more dessert-like version, add a few cacao nibs or a drizzle of almond butter over the top.
Kitchen Notes
The key to matching the image is keeping the smoothie base very thick. Use frozen fruit, start with minimal liquid and blend patiently. If too much plant milk is added, the bowl will look more like a smoothie than a spoonable açaí bowl.
A food processor often works better than a standard blender for thick smoothie bowls because it can handle the low-liquid mixture more easily.
Frozen currants, raspberries, blueberries or blackberries help create the frosty berry look shown in the image. Fresh berries will taste lovely, but they will not give the same chilled, slightly icy appearance.
Pairs Well With
This bowl pairs well with hot coffee, green tea, a simple avocado toast, seeded toast with almond butter or a small side of roasted breakfast potatoes if serving it as part of a larger brunch.
