Ingredients
3 cups (450 g.) seedless watermelon, cubed
1/2 cup (75 g.) cucumber, peeled and chopped
1/4 cup (35 g.) red bell pepper, chopped
2 tbsp. (30 ml.) lime juice
1 tbsp. (15 ml.) extra virgin olive oil
1/4 tsp. (1.5 g.) sea salt
1/8 tsp. (0.5 g.) chili flakes or a dash of hot sauce
1 tbsp. (3 g.) fresh basil or mint, chopped
2 tbsp. (20 g.) finely diced cucumber and red bell pepper, for garnish
Watermelon wedges and fresh herbs, for serving
Directions
Add watermelon, cucumber, red bell pepper, lime juice, olive oil, sea salt, and chili flakes to a blender.
Blend until smooth and taste to adjust seasoning, adding more lime juice or salt if needed.
Chill in the refrigerator for at least 30 minutes before serving.
Pour into small glasses or shot cups.
Garnish with a spoonful of finely diced cucumber and red pepper, a sprinkle of fresh herbs, and a mini watermelon wedge.
