These lettuce-wrapped tacos are bright, spicy, and easy to assemble. Packed with black beans, bell peppers, and mango salsa, they’re topped with a dollop of fresh guac for a refreshing twist.

Ingredients - For the Wraps
1 (425 g / 15 oz) can black beans, drained and rinsed
1⁄2 cup (75 g) diced red bell pepper
1⁄2 cup (75 g) diced yellow bell pepper
1⁄4 cup (40 g) diced red onion
1⁄2 cup (75 g) diced mango
1 small jalapeño, minced (optional)
Juice of 1 lime
Sea salt, to taste
8 iceberg or butter lettuce leaves, washed and dried
For the Guacamole
1 ripe avocado
2 Tbsp. (20 g) finely chopped red onion
1 small tomato, seeded and finely chopped
Juice of 1⁄2 lime
Pinch of sea salt
Directions
In a bowl, combine black beans, bell peppers, onion, mango, jalapeño, lime juice, and salt. Stir to combine.
In a separate bowl, mash the avocado with red onion, tomato, lime juice, and salt until smooth.
Lay out the lettuce leaves. Spoon the black bean mixture into each leaf.
Top with a spoonful of guacamole and serve immediately.
