1 lb. (450 g.) carrots, peeled and cut into sticks
1 tbsp. (15 ml.) extra virgin olive oil
1 tbsp. (15 ml.) maple syrup
1/4 tsp. (1.5 g.) sea salt
1/8 tsp. (0.5 g.) ground black pepper
1 tbsp. (4 g.) chopped fresh parsley, for garnish
Directions
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, toss the carrot sticks with olive oil, maple syrup, sea salt, and black pepper until evenly coated.
Spread the carrots in a single layer on the prepared baking sheet.
Roast for 20 to 25 minutes, flipping halfway through, until the carrots are tender and slightly caramelized.
Transfer to a serving dish and sprinkle with chopped parsley before serving.
